I most certainly did not come up with the idea of “overnight oats” but it has become such a staple in my diet that I couldn’t help but share. This recipe is ideal for busy people, since it is prepped in advanced and is ready when you are in the morning! Add whatever mix-ins you want to create the flavors you enjoy. This recipe makes one serving, but feel free to prepare more at the beginning of the week to have breakfast waiting for you every morning!
Ingredients:
½ cup rolled oats
½ cup almond milk
¼ cups – ½ cup greek yogurt (optional–for a thicker consistency)
¼ -½ cup frozen blueberries
½- 1 scoop vanilla protein powder
1 tsp vanilla extract
½ tsp cinnamon
Directions:
1. Mix all ingredients in a portable, sealable container. Store in fridge overnight.
Oats will soften through night.
2. In the morning, add more liquid if preferred. Can be eaten cold or warmed up in the microwave.
This recipe creates a “blueberry muffin” flavor. Below are some ideas for mix-ins for some simple variations:
Chocolate covered strawberry Oats:
Frozen strawberries, chocolate protein powder (or cocoa powder with vanilla protein powder)
Chocolate Peanut Butter Oats:
Peanut butter, cocoa powder, mashed banana
Peaches and Cream:
Fresh peaches, maple syrup, vanilla protein powder, nutmeg and cinnamon
Apple Pie:
Apples, maple syrup, vanilla protein powder, cinnamon
