Quiche

 You can’t go wrong with this delicious recipe.

Make weekly and heat up for a quick, easy meal when life gets busy.

Ingredients:

12 eggs (10 egg whites + 2 whole eggs)
1 cup Simply Potatoes shredded hash browns (seasoned)
1 Zucchini
1 Yellow Squash
¼ cup low fat mozzarella cheese or fat-free feta cheese
Garlic salt

 

Directions:

  1. Pre-heat oven to 400 degrees
    2.  Scramble egg mixture
    3. Shred zucchini/squash in food processor or chop up into small pieces
    4. Spray meatloaf size pan or #12 muffin tray with Pam Spray
    5. spray 2 large fry pans with Pam Spray
    6.  Pan #1 = potatoes, cook until browned
    7.  Pan #2 = zucchini/squash, season with garlic salt and cook until done
    8.  Place cooked potatoes in bottom of meatloaf pan/muffin tray
    9.  Add eggs, zucchini/squash, and cheese….slightly “top stir” egg mix to blend
    10.  Cook approximately 25 min. or until done
    *Can use other veggies and seasonings for variety
