Protein Pancakes

Ingredients:

12 egg whites/2 yolks
1 cup oats
½ cup fat-free cottage cheese
½ cup blueberries (can use frozen)
½ tsp. cinnamon
½ cup walnuts
½ tsp. vanilla extract
+ add small amount of water until pancake consistency

* Can add 1-2 scoops protein powder for extra protein (not all types are good for cooking though)

Directions:

Mix above ingredients and then cook in skillet, browning both sides of pancakes.
