Double Doubles

You can’t go wrong with this quick and easy high protein, low carb meal.

Ingredients:

4 egg whites
2  brown rice cakes (or white cheddar flavor)
1/8 cup low fat shredded mozzarella cheese
Salsa

Directions:

1.  Sprinkle rice cakes with cheese
2.  Spray pan with Pam Spray and cook egg whites like a “flat omelet”
3. Cut “flat omelet” in half
4. Sprinkle cheese on rice cake, place cooked egg on top and top with salsa
